Choosing a sourdough flour
Sourdough ferments slowly, so the flour needs enough strength to last the whole rise. Most of the flours here are Strong or Very strong, W 300 and up.
Grain matters as much as strength. Tipo 1, Tipo 2 and whole wheat flours keep more of the bran and germ, which gives the starter more to feed on and the loaf more flavor. A common approach is a strong refined flour for structure with 20–40% Tipo 1, Tipo 2 or whole wheat for taste.
To keep the starter itself healthy, see our Starter feeding page: refined flours work best for regular feedings.
