This unique flour from Molino Dallagiovanna is made from the innovative cereal Tritordeum. Tritordeum is a hybrid crop, obtained by crossing durum wheat with wild barley. This flour boasts significantly higher levels of lutein, fiber, and oleic acid compared to wheat. Thanks to the barley's high digestibility, this flour is an excellent alternative to regular wheat. It is ideal for sourdough breads and focaccia that require short to medium leavening times.
