Who said that gluten free pizza can't taste as good as its gluten-containing counterpart? Well, those who do probably haven't tried making pizza with high quality gluten free mixes. Our FioreGlut mix from Caputo as well as our Petra 0001 from Molino Quaglia make incredible pizza that can rival its gluten-containing counterpart.

Here's our go to recipe:

1 kg FioreGlut or Petra 0001
800 g Water
8-9 g Yeast
20 g Extra Virgin Olive Oil
25 g Salt

Mix all ingredients, form into 270 grams balls, pack them tightly, and place them in the fridge for 24 hours to rest. Roll out each pizza leaving a thicker edge.
