Crafted by the expert Molino Quaglia, Petra 0009 is a new baking mix that provides professional-quality results for pizza.
This gluten-free mix was developed to create a nice, extensible, pizza dough that behaves exactly like a gluten-containing one. It can be handled in a traditional pizza proofing box, without requiring covering with plastic wrap. Dough made with this mix can be left to rise for up to 48 hours and responds well to cold proofing.
The recommended hydration with this product is 90%.
