The best Mariani flour for pizza

For everyday pizza with a short or medium rise, start with Pizza and Bread, a soft all-round flour in a 1 kg bag. For long, cold rises and pan pizza, use Manitaly: Mariani suggests it for 72 to 96 hours in the fridge.

Mariani's professional pizza flours come in 12.5 kg (27.5 lb) bags. Volare (W 260–280) is for traditional round, Neapolitan and Roman-style round pizza with rises of 24 to 48 hours in the fridge. Volare Forte (W 310–330) and the single-variety Epsilon (W 320–340) take 48 to 72 hours and suit contemporary pizza, pizza in pala and Roman-style pan pizza; Epsilon also works for biga.

For pan pizza and pizza in pala with more of the grain, the Urbano flours Tipo 1 Forte and Tipo 2 Forte are strong, fiber-rich flours for 48 to 72 hours in the fridge, sold in 25 kg (55 lb) bags.

Manitaly, Monocultivar and Urbano: how to read the names

Mariani groups its flours into lines. Manitaly is its Manitoba-strength flour made only from Italian wheat grown in the Marche, and Manitaly Integrale is the whole wheat version. The Urbano flours, named for Urbano Mariani, the second generation, are fiber-rich Tipo 1 and Tipo 2 flours; the word after the grade (Base, Media or Forte) tells you how strong each one is. Volare, Volare Forte, Frollina and Sfoglia belong to Le Favolose, Mariani's line of professional flours for specific jobs.

Each Monocultivar flour is milled from a single wheat variety, grown, harvested and milled in the Marche, and the line is named with Greek letters. We stock:

  • Thin pizza and pastry: Alpha, a soft Tipo 0 (W 170) for thin Roman-style pizza, homemade bread, shortcrust and biscuits.
  • Whole wheat: Gamma, a strong whole wheat flour (15.5% protein) for whole-grain pizza, bread and sweet leavened doughs.
  • Golden Tipo 1: Delta (W 280–300), which Mariani calls a “one and a half” because it sits between Tipo 1 and Tipo 2, for bread, pizza, focaccia and cookies.
  • Contemporary pizza: Epsilon, for contemporary and Neapolitan pizza with rises of 48 to 72 hours.
  • Sourdough: Zeta, for feeding a starter and making preferments, croissants and viennoiserie.
  • Panettone: Omega, a very strong flour (W 400) for panettone, colomba and other large leavened cakes.

Tipo 00, Tipo 1, Tipo 2 and whole wheat

Mariani mills flour in every Italian grade, and the 1 kg bags make it easy to try them side by side. The grade tells you how much of the grain is in the flour, not how strong it is: Tipo 00 is the most refined, while Tipo 1, Tipo 2 and whole wheat (integrale) keep more of the bran and germ, for a darker, more rustic loaf.

Strength varies a lot within a grade. Mariani's Tipo 00 flours run from soft Frollina (W 160) for cakes and cookies to strong Sfoglia (W 330–350) for puff pastry, so choose by use and W rather than by grade.

Bread, sourdough, panettone, pastry and pasta

  • Bread: Tipo 1 for everyday rustic loaves; Manitaly for ciabatta and long-proofed bread; Gamma or Manitaly Integrale for strong whole wheat doughs.
  • Sourdough: Zeta is Mariani's flour for feeding a starter and making preferments; Mariani also suggests Manitaly for starter feeding.
  • Panettone and colomba: Omega, which Mariani says was Italy's first panettone flour made only from Italian wheat.
  • Pastry: Frollina for shortcrust, cakes and cookies; Sfoglia for puff pastry, choux and doughnuts.
  • Pasta: Pasta Fresca (Tipo 00) for fresh egg pasta and gnocchi; Semola Rimacinata, finely milled durum semolina, and Coarse Durum Semolina (25 kg) for durum pasta and semolina bread.
  • Gluten-free: two mixes, Pizza & Bread and Pasta & Pastry, made from rice flour and rice, corn and potato starches.

The mill's story

About Mariani

Molino Paolo Mariani (the company is Molino Mariani Paolo S.r.l.) dates back to the early 1900s, when Quinto Mariani bought an old stone mill, built in 1792, in the hills of the Marche. In the 1950s his sons replaced the millstones with the mill's first roller mill, and his son Urbano kept the business going in Barbara, in the province of Ancona. Paolo Mariani, who gave the mill its name, ran it next, and in 2021 his son Danny took over as the fourth generation.

How Mariani grows and mills its wheat

Mariani mills only Italian wheat, grown in the Marche and Emilia-Romagna. In 2014 it set up its own supply chain, which it calls the first cereal supply chain in the Marche; today about 80 farmers grow wheat for it on some 3,000 hectares (about 7,400 acres). On 150 hectares of its own experimental fields, it tests every wheat variety for at least three years.

The wheat is milled on roller mills. Each Monocultivar flour is made from a single variety, grown, harvested and milled in the Marche, and the Urbano flours are fiber-rich flours that Mariani mills with what it calls a “whole-body” technique.

What's in it, and what isn't

Mariani's spec sheets list one ingredient for its wheat flours: soft wheat flour from 100% Italian wheat (or durum wheat semolina for its semolinas), and they state the flours contain no GMOs. The sheets also note possible traces of soy and, for some flours, mustard. Mariani holds IFS food-safety certification and ISO 22005 supply-chain traceability certification, and lists kosher and halal certification. Its gluten-free mixes are made from rice flour and rice, corn and potato starches, with no wheat among their listed ingredients, and Mariani says they contain no enzymes.

Why we carry Mariani

Mariani controls its wheat from the field to the bag, and it says Manitaly is the only flour with the strength of a Manitoba made entirely from Italian wheat. Its range lets us cover almost every bake with one mill: Manitaly and the everyday Tipo 1, Tipo 2, whole wheat, Pizza and Bread, Pasta Fresca and semolina flours in 1 kg (2.2 lb) bags for home bakers, and the Monocultivar, Volare and Urbano flours in 12.5 kg (27.5 lb) and 25 kg (55 lb) bags for pizzerias, bakeries and keen home bakers.

Molino Paolo Mariani Flour FAQs

What is the best Mariani flour for pizza?

It depends on your dough and how long it rises. For everyday pizza with a short or medium rise, use Pizza and Bread; for long, cold rises and pan pizza, use Manitaly. Pizzerias and keen home bakers can choose Volare for Neapolitan pizza with 24- to 48-hour rises, or Volare Forte and Epsilon for contemporary pizza with 48- to 72-hour rises.

What is Manitaly flour?

Manitaly is Molino Paolo Mariani's strong Tipo 0 flour: it has the strength of a Manitoba flour (W 340–360, 15.5% protein) but is made only from Italian wheat grown in the Marche. Mariani suggests it for rises of 72 to 96 hours in the fridge, pan pizza, ciabatta and long-proofed bread, and for feeding a sourdough starter. We stock it in 1 kg (2.2 lb), 12.5 kg (27.5 lb) and 25 kg (55 lb) bags.

Is Manitaly the same as Manitoba flour?

Not quite. “Manitoba” is the Italian name for a style of very strong flour, named after the Canadian province and traditionally milled from North American wheat. Manitaly has that strength (W 340–360), but Mariani makes it exclusively from Italian wheat from its own supply chain in the Marche.

Which Mariani flour is best for a sourdough starter?

Zeta. Mariani makes this single-variety Tipo 0 (W 340, 14.5% protein) for refreshing sourdough and making preferments, and we stock it in 12.5 kg (27.5 lb) bags. If you'd rather buy a 1 kg (2.2 lb) bag, Mariani also suggests Manitaly for starter feeding.

Which Mariani flour should I use for panettone?

Omega, a very strong single-variety flour (W 400, 15.5% protein) that Mariani recommends for panettone, colomba and other large leavened cakes. Mariani says Omega was Italy's first panettone flour made only from Italian wheat. We stock it in 12.5 kg (27.5 lb) bags.

What's the difference between Mariani Volare and Volare Forte?

Volare Forte is the stronger of the two, for longer rises. Volare (W 260–280, 13.5% protein) is for traditional round, Neapolitan and Roman-style round pizza with rises of 24 to 48 hours in the fridge. Volare Forte (W 310–330, 14.5% protein) takes 48 to 72 hours in the fridge and suits contemporary pizza, pizza in pala and Roman-style pan pizza.

What does Monocultivar mean on Mariani flour?

It means the flour is milled from a single wheat variety, grown, harvested and milled in the Marche, rather than from a blend. Mariani names them with Greek letters: Alpha for thin Roman-style pizza and pastry, Gamma for whole wheat doughs, Delta for bread and pizza, Epsilon for contemporary pizza, Zeta for sourdough and Omega for panettone.

Which Mariani flour is best for fresh pasta?

Pasta Fresca, a Tipo 00 that Mariani makes for every kind of fresh pasta and for gnocchi. For durum wheat pasta such as orecchiette or cavatelli, use Semola Rimacinata, finely milled Italian durum semolina. For gluten-free pasta, Mariani makes a Gluten-Free Pasta & Pastry mix.

Where is Mariani flour made, and where does the wheat come from?

Molino Paolo Mariani mills in Barbara, in the province of Ancona in Italy's Marche region. It uses only Italian wheat, from the Marche and Emilia-Romagna, grown by about 80 farmers in its own supply chain and on its own experimental fields.

Is Mariani flour organic?

The Mariani flours we stock aren't certified organic. What Mariani certifies is its supply chain: it holds ISO 22005 traceability certification and IFS food-safety certification, and it buys its wheat from a set group of Italian farmers. For certified organic flour, see our organic flour collection.

How long does Mariani flour last, and how should I store it?

Mariani's spec sheets give its flours a shelf life of 9 to 12 months from milling, depending on the flour, so check the date on the bag. Keep the bag sealed in a cool, dry place; Mariani suggests 59–64 °F (15–18 °C). Dates on Italian bags read day/month/year, so 06/05/2027 means May 6, 2027.

Where can I buy Mariani flour?

Right here. We stock Mariani flours in 1 kg (2.2 lb), 12.5 kg (27.5 lb) and 25 kg (55 lb) bags and ship them across the U.S. from our warehouse in Richmond, Virginia. In Canada, you can ask for them through our Request a Product page.
