Uncompromising on quality, Molino Paolo Mariani has been focusing on using solely 100% Italian grains in its flours since its inception in 1905.
After many years of research, Molino Paolo Mariani started cultivating this wheat variety in the Marche region in Italy in 2019. This variety, cultivated it in the hilly territories of Barbara and Corinaldo, boasts a softer caryopsis compared to other high-protein flours, making it easier to mill with a gentle grinding process, after 24-36 hours of soaking.
The resulting flour is extremely stable, and able to easily absorb the many fats and inclusions required for products like Panettone, creating a softer and smoother final product.
