            Buying guide

Palazzo di Varignana olive oil guide

How to choose a Palazzo di Varignana olive oil

Start with intensity. The estate rates each oil light, medium or intense: LaFonte is light, Cabianca is medium, and single-variety oils such as Maurino and Brisighella DOP are intense, with greener, bolder flavors and a stronger peppery finish. If you're not sure, the Trilogy set lets you taste three styles side by side.

Single-variety (monocultivar) oils are made from one olive variety, so each tastes of that olive. Blends (multivarietal) such as Cabianca and LaFonte combine several varieties. The estate releases a new collection each year, so check each oil's page for what's in stock.

Olive oil for pizza, focaccia and bread

Palazzo di Varignana recommends using its single-variety oils raw, and we suggest the same for the rest: add them after cooking, not before.

            • Pizza: a thin drizzle of Cabianca as the pizza comes out of the oven, or a few drops of Chili Pepper oil for heat.
            • Focaccia: brush Cabianca over a baked focaccia just before serving. For the dough, see our focaccia flours.
            • Bread: pour a little into a dish for dipping crusty bread, or over bruschetta with tomato.

            Truffle, chili and lemon oils

The estate makes its flavored oils from its own extra virgin olive oil and natural flavors. We stock three, each in a 100 ml (3.4 fl oz) can. A little goes a long way, so add them at the end.

            • Truffle: pasta, eggs, fries and white pizza.
            • Chili Pepper: pizza, pasta, grilled meat and fish, and crusty bread.
            • Lemon: grilled fish, salads and vegetables.

            Gifts and tasting sets

The Trilogy set holds three 100 ml (3.4 fl oz) bottles, currently LaFonte, Cabianca and Maurino, so you can compare light, medium and intense oils. A 500 ml (16.9 fl oz) bottle of Cabianca also makes an easy gift for someone who cooks. For a pizza-night gift, pair either with Italian tomatoes and a bag of Neapolitan pizza flour, or browse more gift ideas.

            The story

            About Palazzo di Varignana

Palazzo di Varignana is a resort and farm estate in Varignana, in the town of Castel San Pietro Terme, in the hills outside Bologna in Emilia-Romagna. In 2005 its founder, Carlo Gherardi, set out to restore Palazzo Bargellini Bentivoglio, a villa dating from 1705. In 2015 the estate's farm company, Agrivar, began bringing abandoned farmland and old native olive varieties back into production.

How Palazzo di Varignana grows and mills its olives

The estate grows olive varieties native to the area, such as Ghiacciola, Nostrana di Brisighella and Correggiolo, alongside Maurino and Leccio del Corno from central Italy. It calls its groves the largest in Emilia-Romagna.

Since November 2023 the olives have been milled in the estate's own mill among the groves, so they can be pressed right after picking; milling runs in October and November. The mill uses a two-phase continuous system at low temperature and sets the temperature for each variety.

            What's in the range

The estate releases a new collection each year. In 2024 that was seven extra virgin olive oils, five single-variety and two blends, plus Aurum, a numbered limited edition. Cabianca and the single-variety Maurino (which the estate also sells as Pandesco Bio) are certified organic, as is Claterna, and Brisighella DOP carries the EU's Protected Designation of Origin. The flavored oils combine the estate's extra virgin olive oil with natural flavors.

Why we carry Palazzo di Varignana

It's a young estate built around native olive varieties and its own mill, and its oils won awards at the NYIOOC World Olive Oil Competition every year from 2019 to 2024. We stock Cabianca and the flavored oils for everyday cooking and pizza, plus tasting sets for gifts.

Palazzo di Varignana Olive Oil FAQs

Which Palazzo di Varignana olive oil should I buy?

For everyday use, start with Cabianca, the estate's organic, medium-intensity blend for bruschetta, salads and finishing pizza. To taste several styles, get the Trilogy set. For a quick flavor boost, try the truffle, chili or lemon oil.

Is Palazzo di Varignana olive oil organic?

Some of it is. Cabianca and the single-variety Maurino (also sold as Pandesco Bio) are certified organic, as is the estate's Claterna. The other oils, including LaFonte, Nostrana, Correggiolo and Brisighella DOP, aren't sold as organic.

Where is Palazzo di Varignana olive oil made?

On the Palazzo di Varignana estate in Varignana, in the hills outside Bologna in Emilia-Romagna, Italy. The estate grows its own olives and, since November 2023, has milled them in its own mill among the groves.

What olive varieties does Palazzo di Varignana grow?

Mostly varieties native to the area, such as Ghiacciola, Nostrana di Brisighella and Correggiolo, plus Maurino and Leccio del Corno from central Italy. Each single-variety oil is made from one of them: Maurino from Maurino, Correggiolo from Correggiolo, and Brisighella DOP from Nostrana di Brisighella.

What's the difference between a monocultivar and a multivarietal olive oil?

A monocultivar (single-variety) oil is made from one olive variety, like Maurino or Correggiolo, so it tastes distinctly of that olive. A multivarietal oil, like Cabianca or LaFonte, blends several varieties.

What does DOP mean on Brisighella olive oil?

DOP stands for Denominazione di Origine Protetta, the EU's Protected Designation of Origin: every stage of production has to take place in the named area. Palazzo di Varignana's Brisighella DOP is made from Nostrana di Brisighella olives and certified under the Brisighella DOP.

Which Palazzo di Varignana olive oil is best for pizza?

For most pizzas, drizzle Cabianca over the pizza as it comes out of the oven. For heat, add a few drops of Chili Pepper oil; for a white pizza, try Truffle oil.

Are the truffle, chili and lemon oils extra virgin olive oil?

They're the estate's extra virgin olive oil with natural flavors added, which makes them flavored oils rather than plain extra virgin olive oil. Use them as finishing oils, a little at a time. Each comes in a 100 ml (3.4 fl oz) can: truffle, chili and lemon.

What's in the Palazzo di Varignana Trilogy set?

The Trilogy set holds three 100 ml (3.4 fl oz) bottles: LaFonte (light), Cabianca (organic, medium) and Maurino (organic, intense). The selection can change with the harvest.

How should I store olive oil?

Keep the bottle closed, away from light and heat, ideally at 55–77 °F (13–25 °C). Once it's open, the International Olive Council suggests using it within one to three months.

Has Palazzo di Varignana won awards?

Yes. The estate's oils won awards at the NYIOOC World Olive Oil Competition every year from 2019 to 2024, including two Gold Awards in 2020, for its Claterna and Vargnano oils.

Where can I buy Palazzo di Varignana olive oil?

Right here. We stock Cabianca in 500 ml (16.9 fl oz) bottles, the Trilogy tasting set, and truffle, chili and lemon oils in 100 ml (3.4 fl oz) cans, and ship them across the U.S. from our warehouse in Richmond, Virginia. In Canada, you can ask for them through our Request a Product page.
