For home pizzaioli and small batches, 5 kg is usually the most practical size. For larger dough batches, frequent baking, or small professional use, 8 kg or 12 kg may be a better fit.
What is the difference between Standard and Evo models?
Standard models use a single motor with a fixed relationship between the spiral and the bowl. Evo models use independent motor control, allowing more precise adjustment of the spiral and bowl movement. This gives advanced users more control over dough development and makes Evo models especially useful for demanding doughs and enriched doughs.
