Which pizza flour should I buy?
Start with your oven and your timing. For a wood-fired or very hot pizza oven and a dough that rests 8 to 24 hours, a Tipo 00 or Tipo 0 around W 260–320 is the classic choice. For a home oven, a slightly stronger flour holds up to the longer bake and gives a chewier crust.
Then match strength to fermentation. Same-day doughs need less strength; two or three days in the fridge, or a biga, call for a Strong or Very strong flour (W 300 and up). Pan and Roman pizza add a lot of water, so they need strength too.
Not sure? Caputo Pizzeria and Caputo Nuvola Super are reliable first bags, and the style pages above narrow the list further.
