Caputo's Semolina is a hard durum wheat, milled using a slow grinding technique which avoids excessive heat that might damage the proteins and starches in the wheat.
This Semolina is double milled ("rimacinata"). Through regrinding, it creates a finer flour that yields a dough which is easier to knead. Semolina is typically a courser flour, but this is finer than typical semolina found in the US.
This Semolina is a wonderful choice for homemade pasta, traditional southern Italian breads (such as 'Pane di Altamura'), and rustic desserts. It's also an exceptional choice for dusting.

Ordered the 8 pack of Semola. Received exactly what I ordered, at the price advertised. No hidden fees. Arrived in a reasonable amount of time based on the shipping option I chose. MUCH cheaper than many other places I found. I'll be ordering my semola from here now. The only thing I would change is the plastic surrounding the flour could be a little bit thicker to protect the flour from moisture in the event the package is handled by a careless carrier. Mine arrived in fine condition, but I could see a scenario where one drop of the box ruins the entire order. That's my only suggestion for improvement. Other than that, I will be definitely be doing business here again.

The only way to make fresh pasta without eggs. It also holds any shape of pasta you desire. The taste is delicious. This is my 2nd purchase from BrickOvenBaker and the flour was fresh and deliver was prompt.
