Caputo's Semolina is a hard durum wheat, milled using a slow grinding technique which avoids excessive heat that might damage the proteins and starches in the wheat.
This Semolina is double milled ("rimacinata"). Through regrinding, it creates a finer flour that yields a dough which is easier to knead. Semolina is typically a courser flour, but this is finer than typical semolina found in the US.
This Semolina is a wonderful choice for homemade pasta, traditional southern Italian breads (such as 'Pane di Altamura'), and rustic desserts. It's also an exceptional choice for dusting.

high quality, makes great bread mixed 2/3 with all purpose flour
I like how it is easy to make a dough and taste at the same time!
Delicious . I have used it for both bread and pasta. Works well with half semola, half double 00 as well. The semola ferments beautifully, creating a soft dough but with a touch more chew, and rich flavor. Great for a clueless baker like myself; the quality of the product makes the difference.
I recently purchased Manitoba flour for pizza & Semolina for Pasta I am very please with speed of delivery, product price, & quality. I higly recommend & I will reorder again. 👍
Very light and delicious pasta
