Nuvola Super is a stronger version of Caputo Nuvola, able to absorb more water and withstand longer fermentation, this flour is ideal for preparations using pre-ferments (biga or poolish) as well as long direct method fermentation processes.

This versatile flour is perfect for all kinds of pizza and focaccia, from Neapolitan-style, to pan pizza and neo-Neapolitan-style pizza. Nuvola was born from the research and development of Mulino Caputo: a careful selection of 100% natural raw materials without additives or preservatives which ensures volume and softness of the dough thanks to the high fermentation capacity naturally present in the grains.

Working Great In My 550 Degree Oven

I have the fight of a not hot enough oven, and struggle with overly crisp crust edges. I've started using a steel which has helped a bit, but the Nuvola has had the greatest positive effect. I get a delicate crispiness to the bottom with a good chew. As advertised, this flour seems to create more of those big bubbles on the edge, and that translates to a more delicate chew. I have used the Nuvola and now the Nuvola Super. At this point I don't have a preference, they have behave the same so far, but the Super is new to me so time may tell.
