A hallmark of Emilia-Romagna, Brisighella DOP is produced in very limited quantities from the Nostrana di Brisighella cultivar. Hand-picked at the start of October and milled within 12 hours, it’s cold-extracted and filtered to preserve an intensely fruity character and light-green hue. Tasting: herbaceous aromas of green apple, rhubarb leaf, and tomato; the palate reprises those notes with a clean, spicy green-olive finish.
This oil is ideal used raw over carpaccio, salads, vellutata/creamy soups, and seafood.
