Volare Forte is the stronger version of the Volare flour. This flour is ideal for long leavening times: 48-72 h including refrigerator/cold proofing. This flour is ideal for high hydration doughs such as for contemporary pizza, Neapolitan pizza, pizza in pala and Roman-style pan pizza.
