For being gluten free it's a good product. My wife has to follow AIP or the autoimmune protocol and she's able to eat this. Obviously your miles my vary. But as far as gluten free flour goes it's pretty close to the real thing. You can't stretch the dough like gluten flour so you have to slightly baby it when forming a pizza crust.

My daughter and granddaughter have Celiac and were always lovers of bread. It's so hard to find a tasty GF bread. When I made my first Artisan bread with this flour, they not only said it was the best GF bread they've tasted but my daughter's non Celiac husband loved it, too. This flour is light years ahead of other GF flours as long as you are not allergic to wheat! I do find it needs a bit more yeast than the few recipes that exist with this flour if you want a really nice, airy rise. It's amazing and worth the buy from BOB in bulk to save on shipping. Freeze the flour you aren't using in the very near future.
