I am gluten intolerant but recently started making sourdough bread with no issues. I contacted customer service and they suggested the uniqua blue for sourdough and longer fermentations. I’ve made two loaves so far and they came out beautifully! I’m also feeding my sourdough starter with the uniqua and it’s growing like gangbusters! Next will be sourdough pizza crust. I’m happy I can get this high quality flour for a good price!
I actually love this flour for making sourdough bread, Panettone and pizza. I like that it is a healthier flour and still has nice flavor and texture to my bake goods.
