Petra 0101HP is crafted from type 1 partially sprouted soft wheat flour, which undergoes a delicate cylinder milling process to preserve its sensory characteristics. Through years of research, Petra Molino Quaglia has developed a controlled germination technique that guarantees optimal dough fermentation, resulting in perfectly crispy and light products.
Petra 0101HP is ideal for croissants or brioches produced with cold proofing or freezing. This flour also performs well for artisanal breads or pizza dough with a cold pre-ferment.
