The best Mulino Marino flour for pizza

For classic pizza, start with Tipo 00: it's Mulino Marino's strongest 00 (W 320–350), made for medium to long rises, and the mill suggests it for both round and Roman-style pizza. For a more rustic crust with stone-ground character, use Buratto, a strong Tipo 2 that keeps the wheat germ.

For focaccia and pizza alla pala, the mill recommends PandiSempre, a stone-ground blend of wheat, spelt and Enkir. If your dough rises for only a few hours, Tipo 0 is made for shorter rises.

Tipo 00, Tipo 2 or whole wheat?

Mulino Marino uses both kinds of mill. Its stone-ground flours, such as Buratto, Macina, Setaccio and Enkir, are milled in a single pass on natural millstones and keep the wheat germ, so they come out blond rather than white. Its roller-milled flours, Tipo 00, Tipo 0, Fresca and Furia Italiana, are finer and whiter.

The grade on the bag tells you how much of the grain is left in, not how strong the flour is: Italian grades run from 00 (the most refined) through 0, 1 and 2 to whole wheat (integrale).

That's why Buratto, a Tipo 2, is stronger than Tipo 0 (W 280–320 against 260–320), and Tipo 00 is the strongest of the three (W 320–350). Choose by use and W first, then by how rustic you want the bake to be.

Bread, whole grain and ancient grains

  • Everyday loaves and sourdough: Buratto on its own, or Tipo 0 for softer loaves and rolls.
  • Whole wheat: Macina is the whole grain with all its bran; Setaccio is semi-whole, with only the fine bran, for bread and grissini.
  • Ancient grains: Enkir is einkorn grown in Alta Langa; its gluten is weaker than modern wheat's, so mix it gently and keep it to simple breads, or blend it. Khorasan Kamut and Sapori Antichi, a blend of spelt, Enkir, Kamut and rye, are for bread, pasta and sweets.
  • Rye and seeded breads: Wholemeal Rye for rye bread, and Sette Effe 2.0, a multigrain flour with flax, pumpkin, sunflower and millet seeds.

Pastry, pasta and polenta

  • Panettone and brioche: Furia Italiana (W 360–440) for panettone, pandoro, colomba, brioche, croissants and puff pastry.
  • Cookies and tarts: Buratto Pasticceria (W 180–200) for shortcrust, cookies, grissini and sponge cake.
  • Pasta: Fresca for fresh and filled egg pasta; Durum Semola for dried pasta, gnocchi and bread; stone-ground Sfarinato durum flour for pasta, southern Italian breads and focaccia barese.
  • Polenta and buckwheat: Fine or coarse whole cornmeal, Taragna (corn and buckwheat), and Buckwheat for pizzoccheri and crêpes.

The mill's story

About Mulino Marino

Mulino Marino (the company is Marino Felice S.r.l.) began in 1956, when the Marino family bought a small mill with three water-powered millstones in Cossano Belbo, a village in the Langhe hills of Piedmont. A roller mill for Tipo 0 and 00 flours followed in 1968. The mill began milling certified organic grain in 1994, started its own Enkir supply chain in 1998, and since 2001 has milled only certified organic grain. Three generations of the family have run it.

How Mulino Marino mills its flour

Mulino Marino has 10 natural stone mills, with millstones quarried at La Ferté-sous-Jouarre in France, and the family still dresses the stones by hand, a skill passed down from grandfather Felice. Stone milling makes flour in a single pass and keeps the germ in. For its Tipo 0, Tipo 00, Fresca, Furia Italiana and durum semola, the mill uses a Bühler roller mill that lets it control the milling temperature and grind at every pass. Before milling, the grain goes through a 12-step cleaning process and an optical sorter.

What's in it, and what isn't

Mulino Marino mills only Italian grain, from farms in Piedmont, Basilicata, Marche, Emilia-Romagna, Lazio, Lombardy and Sicily, and all of it is certified organic (its certifier is Q Certificazioni, IT BIO 014). The mill's spec sheets say its flours have no added gluten, improvers or preservatives, aren't heat- or chemically treated, and test negative for GMOs. Mulino Marino also publishes lab results for each production lot, which you can look up by the lot number on the bag.

Why we carry Mulino Marino

Mulino Marino is a fully organic mill that uses only Italian grain, and its range runs from strong roller-milled flours for pizza and panettone to stone-ground whole wheat, ancient grains and polenta. We stock most of its flours in 1 kg (2.2 lb) bags, plus 5 kg (11 lb) and 25 kg (55 lb) bags of the flours home bakers and pizzerias use most.

Mulino Marino Flour FAQs

What is the best Mulino Marino flour for pizza?

For most pizza, Tipo 00: it's the mill's strongest 00 (W 320–350), made for medium to long rises and suggested for round and Roman-style pizza. Choose Buratto for a more rustic, stone-ground crust, and PandiSempre for focaccia and pizza alla pala.

Which Mulino Marino flour is best for bread and sourdough?

Buratto is the one to start with: a strong, stone-ground Tipo 2 (W 280–320) that handles long rises. For more of the whole grain, use Setaccio (semi-whole) or Macina (whole wheat), on their own or blended with Buratto.

Is Mulino Marino flour organic?

Yes. Mulino Marino has milled only certified organic grain since 2001, and every flour we stock from it is organic. The mill is certified by Q Certificazioni (IT BIO 014) under EU organic rules.

Is Mulino Marino flour stone-ground?

Some of it. Buratto, Buratto Pasticceria, Macina, Setaccio, PandiSempre, Enkir and Sfarinato are ground on natural millstones. Tipo 00, Tipo 0, Fresca, Furia Italiana and the durum semola are roller-milled, which makes them finer and whiter.

What's the difference between Mulino Marino Tipo 00 and Tipo 0?

Tipo 00 is the stronger flour (W 320–350, against 260–320 for Tipo 0), made for pizza, bread and fresh pasta with medium to long rises. Tipo 0 is made for medium to short rises, from cakes and pastries to loaves, rolls, pizza and focaccia.

What is Mulino Marino Buratto flour?

Buratto is a Tipo 2 flour ground on natural stone and then sifted ("abburattata" in Italian), which gives the whitest flour stone milling can make while keeping the wheat germ and a little fine bran. It's strong (W 280–320) and the mill's all-rounder for bread, pizza, sweets, grissini and fresh pasta. Buratto Pasticceria is a softer version for pastry.

Which Mulino Marino flour should I use for panettone?

Furia Italiana, the mill's strongest flour (W 360–440, 16% protein), made for panettone, pandoro, colomba, brioche and croissants. It's called a Manitoba-style flour because of its strength, but it's milled from Italian wheat.

Which Mulino Marino flour is best for pasta?

For fresh and filled egg pasta, Fresca, a fine Tipo 00 the mill makes only for pasta. For dried and eggless pasta and gnocchi, use Durum Semola, or stone-ground Sfarinato for a more rustic durum flour.

Where is Mulino Marino made, and where does the grain come from?

Mulino Marino mills everything at its family mill in Cossano Belbo, in the province of Cuneo in Piedmont, where it has milled since 1956. It uses only Italian grain, from organic farms in Piedmont, Basilicata, Marche, Emilia-Romagna, Lazio, Lombardy and Sicily; its Enkir is grown in Alta Langa.

What is Enkir flour?

Enkir is Mulino Marino's name for einkorn (Triticum monococcum), one of the oldest cultivated wheats, grown for the mill in Alta Langa since 1998 and ground on stone. It has a golden color and contains gluten, but weaker gluten than modern wheat, so mix it gently. We also stock a whole-grain Enkir.

How long does Mulino Marino flour last, and how should I store it?

Mulino Marino gives its flours a shelf life of about 12 months. Keep the bag sealed in a cool, dry place, away from heat and light. Dates on Italian bags read day/month/year, so 06/05/2027 means May 6, 2027.

Where can I buy Mulino Marino flour?

Right here. We stock most Mulino Marino flours in 1 kg (2.2 lb) bags, plus 5 kg (11 lb) and 25 kg (55 lb) bags of a few, and ship them across the U.S. from our warehouse in Richmond, Virginia. In Canada, you can ask for them through our Request a Product page.
