Petra 8612 is a high quality durum wheat semola. This flour is coarser than "remilled semolina", and is characterized by a distinct amber-like color, and strong aroma. This flour is fantastic for dusting NY-style pizza, giving it a nice crunch and flavor, as well as for traditional bread and pasta that have a strong rustic flavor, or as an inclusion (5-20%) in pizza like roman-style pizza in teglia.
