Pasini Meraviglia 400 (10kg)

One of the newest additions from Molino Pasini, this revolutionary flour was developed specifically for developing products that, at the same time, offer a strong crunch and a well-developed 'cornicione'.

This is the "Medium" strength version of this flour, with a W of around 400. It is best used for long leavening, especially for indirect methods. It can support extreme hydration levels, easily above 80%.
