Superior wheat flour

I first found this flour at Arnolfo restaurant in Italy and finally got a chance to buy in the US. I think if you are doing wheat breads it is a more delicate wheat compared to the products usually available in the US. I mostly use it to blend with my sourdough and to add complexity to my starter.
