Foricher Pâtissière is a French pastry flour made from certified wheat that is ideal for a wide range of classic pastry and cooking applications, including biscuits, cakes, choux, crêpes, génoise, madeleines, breading, pizzas, pound cake, Breton sablés, sauces, soufflés, and sweet or short pastry tart doughs.
This flour is made from 100% certified French wheat selected by terroir and stored without insecticide treatment, using natural-air ventilation. Because it is a T55-style pastry flour, it sits in a useful middle ground: refined enough for tender textures, but still broad enough in use to cover many everyday French pastry applications.
