Petra 0115 is an additive‑free whole rye flour noted for very high liquid absorption—plan on ~90% hydration or higher relative to flour weight. Because rye is rich in enzymes and low in gluten‑forming proteins, knead with hot water (50–70 °C) and favor live sourdough to moderate enzymatic activity and boost aroma, volume and shelf life. A planetary mixer with paddle helps manage rye’s naturally creamy, sticky dough. Expect modest rise and a fine, compact crumb, typical of authentic rye breads.
