Engineered for the tallest, most aromatic grandi lievitati, 00 Panettone Riposata Grande Cuvée is Molino Pasini’s flagship pastry flour.
Only produced around the holidays in limited quantities, this flour is rested (“affinata”) after milling an additional 4 weeks in a controlled cellar for peak handling, flavor, and performance. This process results in a flour that brings out the ultimate performance for panettone, pandoro, and colomba.
Compared to the base "Panettone" flour, the "Riposata" has higher power, tolerance, stability, and aroma.
