Foricher Bagatelle T65 is a white bread flour, made in France from 100% French Wheat.  It is roller-milled from soft wheat by one of France’s prominent mills, Foricher. It has achieved both CRC (Controlled Responsible Production) and the French Red Label for quality and traceability. For use in traditional bread making, this flour is exceptional for baguettes.

The 65 refers to the amount of mineral content that is left after burning the flour i.e. T65 has about 0.65% mineral content. T65 flour is equivalent to Type 0 / Type 1 Italian flour, Euro 650 flour type and high gluten bread flour.

T65 is the standard bread flour in France, the one used for baking baguettes. A careful blending process at the mill produces a flour that is tailor made to suit the traditional French bread making process, with a long fermentation time. The gluten content is just right to give an extensible dough, but one with not too much elasticity. T65 flour has a sweet, balanced flavor and is ideal for just about all of your bread making needs, but is especially good for slow fermented loaves.

First use

70% hydration brought it to three full gassy rises and left it chewy with a crisp crust. Taste positively French.

Very good

I am currently using this flour for most of my breads. I think that good technique and knowledge will yield a great bread with any flour. Using this flour will add a little extra dimension to your products. I only wish I could by in 10 or 20kg packages rather than a ton of small ones.

Amazing Baguette

Amazing Flour. Please continue to carry these French T65 flour's. Just like I needed Caputo for that authentic nepolatana pizza, I needed an authentic French T65 to get a real baguette here in America. Let's get some La Marcelle next please.
