The flour comes exclusively from healthy, loyal and commercial cereals on which traditional cleaning and washing is carried out with the relative water purification system in compliance with environmental standards. The flour does not contain foreign substances to wheat and has not undergone artificial bleaching or similar treatments, it is free of additives and technological aids of any nature.
This flour, recommended by Master Pastry Chef Iginio Massari, was specifically designed for Pasta Madre feedings. It is perfectly balanced and will support the development of pasta madre so that it can rise appropriately, and develop a strong aroma and balanced acidity levels. This flour can also be used for preparations that require long leavening times such as panettone, colomba, brioches, croissant.

I originally got this to feed the pasta madre I purchased from Brick Oven Baker because another one of the recommended flours to feed PM was out of stock. Although I have not used it to make a successful panettone yet, I have made a beautiful brioche with it. It is turning out to be one of my favorite flours for baking! Thanks, BOB for another great suggestion!
This flour made a huge improvement to my sourdough starter. The starter is rising faster and higher, and smells amazing. The product arrived quickly, was packaged well, and had a really nice note on it. I will definitely buy from this company again.
