This durum wheat semolina from historic Italian mill Molino Dallagiovanna is your all-round base for rustic bread, homemade pasta and doughs with a bit more bite. Its naturally golden colour and grainy texture give loaves a fuller flavour and help pasta keep its shape with a pleasant, firm al dente finish.
Milled from 100% durum wheat, this semola is designed for both baking and fresh doughs: use it on its own for traditional semolina breads, or blend it with soft wheat (Type 00 or Type 0) to add strength, colour and character to everyday loaves, pizza and focaccia. The slightly granular feel also makes it perfect for dusting pizza peels and worktops, helping dough slide easily and promoting a crisp, golden base that burns less quickly than plain white flour.
