With a spectactular combination of W 390-420 and P/L 0,50-0,55, Molino Pasini 00 Arancio is a wonderful flour for long leavening productions of all styles of pizza. It shines with both direct method long cold fermentation (48+ hours), as well as when used to prepare biga or poolish. It easily withstands hydration of 75-80%.
