Petra 5009 “Spolverella” is a purpose‑built dusting flour for pizza benches and peels. It blends Type “00” soft wheat flour with re‑milled durum semolina, gently roller‑milled on cast‑iron cylinders and lightly toasted. This specific granulometry and toasting help it resist burning in the oven and release cleanly from dough, cutting waste during make‑up.
On the bench it produces minimal dust, keeps dough from sticking while you stretch the pizza, and encourages a well‑browned cornicione. The blend is additive‑free, giving you clean performance without improvers.
