My gluten free husband is happy for fresh pizza dough again!

My husband was recently diagnosed with having issues with gluten. I love working with real yeast dough and I wasn’t sure how we were going to have our Friday night pizzas as pretty much every thing I bought tasted *off* to him. I ran across Caputo Gluten Free Flour on a blog site and decided to give it a try. There is a learning curve to using gluten free flours as they lack elasticity, but once I figured it out, I was able to launch them onto my Baking Steel to cook. My hubby is so happy with the flavor as am I. I don’t have to make two separate pizzas for dinner as this dough is very good. I’m looking forward to trying some other recipes with it soon! It makes great pizza though and well worth the money paid!

Better luck next time

A recipe to go with the flour would have been really helpful. I found one on youtube but misunderstood what the cook did. He appeared to have emptied the whole bag into a bowl - he said 500g. I didn't realize until I did the same thing that the bag had 1,000g of flour in it. I placed in the other ingredients and mixed together. I kept wondering why it was so dry. Then I read the bag, 1000g so I added more ingredients. The dough was wetter but still a little too dry. I cut it in half and made a deep dish pizza and a loaf of bread. The bread came out too dry and hard as it had to cook longer than the pizza. The pizza had great flavor and texture but turned out too thick. Next time I will know better not to use the whole bag of flour - 500g at a time only.
