With no mycotoxins, pesticides, or preservatives and never treated with glyphosate, this premium flour is perfect for a variety of baked goods such as bread, leavened pastries, pizza, focaccia, and fresh pasta. Its versatile dough can last up to 16 hours at room temperature (68°F) or up to 48 hours when refrigerated at 40°F.

Absolutely superb whole grain! The taste, the texture, zero bitterness a you often get from typical North American whole grain varieties (tannins I'm guessing). Benefits from long hydration, beautifully integrates in the sourdough breads providing light texture and great flavors!

Petra flour used in a 60% Poolish fermented dough gave me very good results. Smooth, semi relaxed dough that was very easy to shape. I’ll be using it again.
