Caputo's Semolina is a hard durum wheat, milled using a slow grinding technique which avoids excessive heat that might damage the proteins and starches in the wheat.
This Semolina is double milled ("rimacinata"). Through regrinding, it creates a finer flour that yields a dough which is easier to knead. Semolina is typically a courser flour, but this is finer than typical semolina found in the US.
This Semolina is a wonderful choice for homemade pasta, traditional southern Italian breads (such as 'Pane di Altamura'), and rustic desserts. It's also an exceptional choice for dusting.
