Nuvola Super is a stronger version of Caputo Nuvola, able to absorb more water and withstand longer fermentation, this flour is ideal for preparations using pre-ferments (biga or poolish) as well as long direct method fermentation processes.

This versatile flour is perfect for all kinds of pizza and focaccia, from Neapolitan-style, to pan pizza and neo-Neapolitan-style pizza. Nuvola was born from the research and development of Mulino Caputo: a careful selection of 100% natural raw materials without additives or preservatives which ensures volume and softness of the dough thanks to the high fermentation capacity naturally present in the grains.

my only pizza flour

I have used this type of flour before. It became difficult to find, but now I can get it at this website. I get such great extensibility, and puffy crust using Caputo Nuvola Super Flour Tipo 0. I am a rank amateur, but this flour makes me seem to be a notch above that level. I don't bother to buy pizzas locally again, because they can't compete with the results I get with this flour.

Amazing Artisan Italian loaves from this!

I found this flour to be very rewarding to work with in all of my recipes. I also discovered it works well as the foundation flour in loaves that ask for additional heritage or artisan flours. It is a wonderful basic bread for crispy crusts and open crumb.
