Aria is the newest flour in the Caputo collection, and it is also one of their most unique flours yet. Formulated with a blend of “0” wheat flour and dried pasta madre (mother sourdough), it is ideal for Pinsa, Pizza in Teglia, and Pizza in Pala. The pasta madre is a dried inactive mother sourdough made solely by combining water and soft wheat flour type “0”. This gives the dough airiness, fragrance, and crispiness. 

Note: you must still use yeast (or a levain) with this flour. The yeast in the flour is inactive and only used as a flavor enhancer / conditioning agent.

Fantastic!

I used this flour to make a loaf of sourdough bread and it turned out perfectly. Delicious! I can't wait to use it to make other baked goods. The price was super reasonable in my opinion. I cannot tolerate wheat flour from America, but I have zero issues with flour imported from Europe. I highly recommend this flour!

Im so glad I took a chance on this flour! I have used it successfully many times in sourdough bread and bagels. I have yet to try it in Pinsa, but will aoon. Thanks, BrickOvenBaker, for carrying such wonderful flours!
