Aria is the newest flour in the Caputo collection, and it is also one of their most unique flours yet. Formulated with a blend of “0” wheat flour and dried pasta madre (mother sourdough), it is ideal for Pinsa, Pizza in Teglia, and Pizza in Pala. The pasta madre is a dried inactive mother sourdough made solely by combining water and soft wheat flour type “0”. This gives the dough airiness, fragrance, and crispiness.
Note: you must still use yeast (or a levain) with this flour. The yeast in the flour is inactive and only used as a flavor enhancer / conditioning agent.

I am loving this flour so far. I have used it a few times to make sourdough bagels. They come out crispy outside with a very light and fluffy crumb. My children love this bagel texture! I cannot wait to use it in pizza when the weather gets a little warmer. Another great Caputo product! Thanks for carrying such a great selection of flours to support my baking obsession!
