Aria is the newest flour in the Caputo collection, and it is also one of their most unique flours yet. Formulated with a blend of “0” wheat flour and dried pasta madre (mother sourdough), it is ideal for Pinsa, Pizza in Teglia, and Pizza in Pala. The pasta madre is a dried inactive mother sourdough made solely by combining water and soft wheat flour type “0”. This gives the dough airiness, fragrance, and crispiness. 

Note: you must still use yeast (or a levain) with this flour. The yeast in the flour is inactive and only used as a flavor enhancer / conditioning agent.

Caputo is the best Gluten Free flour for baking bread! Period!!!

I am gluten free and all my Artisan bread/sourdough bread came out like bricks. I purchased a 2.2 pound bag after watching Baking with the Coias on Utube. The bread is absolutely delicious! I recently purchased the 11 lb bag for my future bread making. I am seeing many recipes on Utube by other bakers using the Caputo Gluten Free flour! If you feel any gluten free flour and then feel the Caputo flour you will see the difference…it’s not gritty and very smooth. I’m sold on this flour. If anyone that uses this flour has a cinnamon roll recipe, would you please share it with me? [****].

Italian flour

I bought an assorted variety of different Italian Flours to make pizza with. Just while fermenting the dough balls, I can tell the dough is going to be great to work with and great tasting.
The shipping was really fast as well.
