Petra Evolutiva 0201 is a type "1" organic flour of "Evolutivo" soft wheat, grown in Sicily.
This special flour was born from the cultivation by the Simenza Association in Sicily of a mix of soft wheats from a Syrian selection of over a thousand seeds. This mixture of seeds is called 'evolutionary wheat population', hence the name of the flour 'Evolutiva - Evolutive' , and means that the wheat of different varieties grown in the same plot is able to evolve and adapt to climate change, the arrival of new diseases or on arrival of weeds. A wheat that makes team work, which is strengthened by evolving into the mix that will survive until the harvest, and which will then be sown the following year. These natural characteristics of the wheat population allow a 100% organic agriculture.
