We are proud to offer Caputo Nuvola Super flour: a product designed to create dough that's light and airy, with beautiful, well-developed and honeycomb-like "cornicione". Nuvola means "cloud" in Italian, and this flour certainly lives up to the name.
Nuvola Super is a stronger version of Caputo Nuvola, able to absorb more water and withstand longer fermentation, this flour is ideal for preparations using pre-ferments (biga or poolish) as well as long direct method fermentation processes.
This versatile flour is perfect for all kinds of pizza and focaccia, from Neapolitan-style, to pan pizza and neo-Neapolitan-style pizza. Nuvola was born from the research and development of Mulino Caputo: a careful selection of 100% natural raw materials without additives or preservatives which ensures volume and softness of the dough thanks to the high fermentation capacity naturally present in the grains.

I’ve been using this flour to make sourdough loaves with a little bit of whole wheat and rye flour added. The results have been excellent. It rises well, and there is good oven spring. The bread has delicious flavor.
So happy I tried this flower. My foccacia, Detroit, and sicilian is next level!
