I use this when ever I need a strong white flour in breads. I blend it with red or white whole wheat flours for my sourdough sandwich loaves. 30% Chef's Flour to 70% whole grain makes a very flavorful and light loaf. The higher protein percent keeps the gluten degradation low over longer cold proofing time for my artisan style loaves.
We are beginner pizza makers and have ordered this flour twice. We love the flour, shipping is prompt and the flour is packaged well. I am gluten-sensitive but this flour does not cause any issues for me. We will definitely order again.
