This is an active, dry yeast and will take its time and not burn out quickly when doing long proofs of 24-48 hours, as is common with pizza dough.
Caputo Lievito is also naturally gluten-free (GF). Saccharomyces cerevisiae is a yeast species that has been instrumental in winemaking, baking, and brewing since ancient times. It is believed to have been originally isolated from the skin of grapes.
The yeast is produced by feeding it with natural Italian molasses. This process gives a pleasant taste to the yeast. If your recipe calls for fresh yeast, only use 1/3 of the amount called for.
